Spanish Rice

Some of my favorite childhood memories were spent gathered around the table at my childhood friend's home, wrapped in the rich aromas of her mother Margarita’s authentic Mexican cooking. I remember spotting a heavy skillet of fresh Spanish rice resting on the stove, warm and ready to share – the best! Margarita’s kitchen was a place of endless hospitality, and her rice was pure comfort—fragrant, perfectly seasoned, and made with love. Having her recipe is a gift, letting me recreate that nostalgic flavor and instantly transport myself back to those golden afternoon meals filled with family, friendship and incredible food.

Ingredients
  

  • 1 cup Rice
  • 1 tbsp Oil
  • ¼ Onion, chopped
  • 1 clove Garlic, minced
  • 2 Bouillon Cubes (chicken)
  • 2 cups Water
  • 3 oz Tomato Sauce

Method
 

  1. Brown rice in pan with oil over medium heat.
  2. Add onion, garlic, bouillon cubes, water and tomato sauce.
  3. Cover, cook on med 20-25 minutes.
